Like last year, my gumbo is inspired from New Orleans Jazz Fest.

This year, my gumbo is an ode to one of the most popular foods at Jazz Fest, the Cochon de Lait Po-Boy. Fingers crossed, I turn this concept into a delicious gumbo.
